These whole cherries, with neither pit nor stem, are preserved in grappa for several months before being coated in a layer of cane sugar and then covered in dark chocolate. The sugar slowly absorbs the alcohol, gradually transforming into a delicious liqueur. This process continues until the sugar has completely dissolved, leaving only the cherry preserved in spirits beneath the chocolate shell.
